The story of lechon craze started in the Spanish era when the Philippines was conquered that time. Spaniards showed the natives how to cook a baby pig or a suckling pig. They choose to serve the small pigs because it has tender meat than the old ones and much more faster to cook. The pig was coated with oil and soy sauce which makes the skin crispy and golden brown in color. Charcoals are then laid and distributed up to the length of the lechon while his other comrade puncture the whole animal to a bamboo.
